MMMMMMM they are so yummy.
Here is my recipe for yummy Plum Pecan Muffins
1 cup brown sugar
1/2 tsp. Vanilla
2 eggs
1/2 cup vegetable oil
1/2 cup plum sauce see below
1 cup flour
1 dash or 2 of cinnamon
1/2 cup of chopped pecans
Mix together the first 5 ingredients. Slowly stir in the flour and cinnamon. Mix so the flour is all blended in. Stir in pecans. Fill greased muffin tins 2/3 full bake @ 400 for 15 min. Keep an eye on it for the last few minutes or edges will start to burn.
Plum sauce
Pit 6 small plums or 2 large plums.
Puree in blender
In small pot heat on low as you mix the above ingredients. This helps to thicken a little.
We tripled the batch and made breakfast for the future. Our freezer is so yummy right now. This is a very sweet muffin but if you want sweeter you can add a glaze to it. I don't have a recipe because I don't like glazes. I am also working on a gluten free recipe but I have a few kinks to work out.
